Here at the World’s Greatest Chilli labs, we have invented a new seasoning technique called a “Heat Spice Ladder” tm. With a heat spice ladder, multiple spices are used with different levels of heat as measured in the Scoville heat unit (SHU) scale. By having a range of heat in the chilli, the flavors are complex and enjoyable. In our chilli recipe, we use four different levels of heat.
- Black Pepper (very mild)
- Ancho Powder (1,500-2,500 SHU)
- Guajilla Powder (5,000-15,000 SHU)
- Chille de Arbol Powder (30,000-50,000 SHU)
